In lieu of the 2025 APEC Sustainable Rising Star Beverage Competition, Astor Bar proudly presents Roots of Harmony—a deeply personal and consciously crafted cocktail by our head bartender, Sahil.

Inspired by childhood memories spent in his grandmother's garden, Sahil reimagines the art of cocktail-making through a lens of sustainability and nostalgia. The cocktail features a thoughtfully chosen blend of fresh mangosteen, house-made coconut cream, and Monkey 47 Gin, transforming a once-forgotten tropical fruit into the centrepiece of an elegant libation.

Drawing from traditions of zero-waste and resourcefulness learned in his youth, Sahil pays homage to the many uses of the humble coconut—from flesh to shell—while celebrating ingredients that are often overlooked but rich in story, flavour, and purpose. Every element in Roots of Harmony reflects a commitment to mindful sourcing, seasonality, and minimal waste.
